Hungarian crêpes (Palacsinta )

Ingredients:

  • 20 ounces flour
  • 1 egg
  • 1 tablespoon oil
  • pinch of salt
  • 4 oz milk
  • 1 oz soda or mineral water
  • as desired filling (jam, nuts , cottage cheese and raisins, peanut butter, cocoa, pudding, etc.).

Preparation:

Mix egg yolk oil and salt in a medium bowls.  Slowly add milk until batter is smooth and consistent.  Add the soda water.  cover and let stand for about a half an hour.

 

Use a non-stick pan for best results.  Spray with cooking spray or coat the pan with a small amount of oil. Preheat the pan and then ladle a small amount of batter onto the hot surface.  Spread the batter quickly by tilting the pan in all directions to spread it evenly.  Cook for about 1 minute or until edges are starting to get dry.  Flip the crepe over and cook for 30 seconds or so on the second side.

Slide the palacsinta on to a large flat plate.  Repeat for the rest of the batter

Spread filling on top and either fold in quarters or roll up.

Ingredients for Cottage/farmers Cheese filling

  • 8-12 oz cottage or farmers cheese
  • 1 package of vanilla sugar
  • 1 or 2 teaspoons granulated sugar
  • one lemon
  • cinnamon (optional)
  • raisins (optional)

Mix ingredients except lemon.  Grate the peel of one lemon and add a small amount of lemon juice into mixture. Spread evenly on palacsinta. and roll up or fold in quarters
